Uova in cestini di patata

Un’idea simpatica per servire le uova !

INGREDIENTI

Per 4 persone

  • 600 gr di patate pelate e passate nello schiacciapatate
  • Pangrattato q/b
  • 3 steli di erba cipollina tagliata a pezzettini
  • sale
  • pepe
  • olio per ungere gli stampini
  • 8 uova
  • 1 cucchiaio e mezzo di margarina

PROCEDIMENTO

  • Preriscaldare il forno a 180°C.
  • Ungere  8 stampini da muffin grandi o foderarli con carta forno.
  • Mettere la purea di patate in una ciotola e tenere da parte.
  • Sciogliere in una padella la margarina e inserire l’erba cipollina, cuocere finche si ammorbidisce.
  • Versare la mistura nella ciotola con le patate, salare e pepare.
  • Foderare completamente gli stampini con la mistura di patate pressando leggermente con le dita.
  • Rompere un uovo in ogni cestino Infornare per 10/15 minuti o finche l’uovo si sarà cotto.
  • Lasciare intiepidire prima di togliere dallo stampo e servire.

ENGLISH VERSION

BAKED EGGS IN POTATO BASKET

(Makes 8 baked eggs)

INGREDIENTS

  • 600g white-skinned potatoes, peeled and roughly chopped
  • Canola oil, for greasing
  • 35g (1/2 cup)bread crumbs or rice crumbs,approximately
  • 11/2tbsp dairy-free margarine
  • 3 Spring onion(scallions) finely chopped
  • Ground sea salt
  • pepper
  • 8 eggs

METHOD

  • Boil or steam the potatoes for 15 minutes, or until tender.Drain well,then return the potatoes to the pan and mash until smooth. you will need 460g 460g (2 cup) of plain mashed potato for this recipe.
  • Preheat the oven to 180°C (350°F/gas 4).
  • Lightly grease eight 80ml /1/2 cup) muffin holes and coat lightly with the bread crumbs or rice crumbs
  • Melt the margarine in a small frying pan,add the spring onions and cook,stirring, until soft. Combine the spring onion mixture with the potato and add salt and pepper to taste. Divide the potato mixture evenly among the muffin holes and press gently over the base and up the sides.
  • Break an egg into each potato nest and bake for 10/15 minutes, or until the egg is just set. Allow to cool slightly and
  • invert to remove from muffin pan. Place egg-side up on serving plates.

  • To ensure you get a central yolk, first break your egg (one at a time)into a cup, then pour into the potato basket.
